Cauliflower Spring Pizza (Gluten Free)

I love cauliflower pizza crusts because its fun way to get in your veggies. It’s also low in carbohydrates, gluten free, and grain free. Cauliflower is a special vegetable that takes on the flavor of anything. I use this crust interchangeably for buffalo chicken, pepperoni, or even mexican pizza. In this recipe I use the pizza crust as a delicious base for salad. It looks beautiful, the flavors are fresh, and its great for a light spring meal.

Cauliflower Spring Pizza (Gluten Free)

Ingredients

  • Cauliflower Crust:
  • 1 Medium Head Cauliflower Grated
  • 1 cup grated goat cheddar or raw milk grass fed cheddar
  • 1 egg
  • Pinch of Sea salt and pepper
  • For the salad:
  • 1 bag of organic spring mix salad greens
  • 1/2 cup cherry tomatoes
  • 1 chopped avocado
  • 1/2 cup chopped cucumber
  • Dressing:
  • Mix up 1/4 cup olive oil
  • Juice of 1 lemon
  • 2 Tbsp White Balsamic Vinegar
  • 1 tsp Raw Honey
  • Pinch Sea Salt
  • dash Freshly Ground Pepper
  • 1/2 tsp dried Herbs De Provence

Instructions

  1. Cauliflower Crust:
  2. Preheat the oven to 400 degrees F
  3. In a large mixing bowl, combine the ingredients.
  4. Grease a metal or cast iron pizza pan or cookie sheet with coconut oil or grass fed butter. Do not use a pizza stone or the texture will not turn out.
  5. Shape the crust into 1 inch of thickness and bake for 35 minutes until golden brown.
  6. Dressing: Whisk together all ingredients and toss with salad ingredients.
