Gluten-Free Best Friend’s Easter Cookies

I want to introduce you to my new GF BFF, Bailey! She’s one of the smart cookies behind the popular website Gluten-Free Best Friends. Her normal partner in crime, Mahaley, was kind enough to let me crash their kitchen for the day. Can’t you tell how excited I was?! “Hi-eeeee!”

Easter4Bailey taught me tons about gluten-free baking, and helped me create adorable Easter cookies that are both GF and vegan!

Gluten-Free Best Friend's Easter Cookies

Ingredients

  • 1/2 cup coconut flour
  • 1 cup white rice flour
  • 1 cup brown rice flour
  • 1 tsp Xanthan gum
  • 1 cup coconut sugar
  • 1/4 cup arrowroot
  • 1tsp baking powder
  • 1 tsp salt
  • 3/4 cups melted coconut oil
  • 1/2 cup apple sauce
  • 2 tbs vanilla extract
  • 1 cup fine coconut flakes
  • Peanut m&ms, Jellybeans or "egg" of choice for decoration

Instructions

  1. Mix all dry ingredients making sure to mix all the different flours together
  2. Mix in wet ingredients
  3. Roll into balls and coat in coconut flakes while shaping into nests with thumb
  4. Bake at 325 for 7-10 minutes
  5. Fill with mini eggs
  6.  

 I love the idea of wrapping these sweet little cookies up in an egg cartoon! I found one with exceptionally bright colors from Vital Farms (available at Whole Foods). I simply wrapped some orange burlap ribbon around the cartoon, printed out some of these FREE PRINTABLES and tied it all up with string! Such a sweet (and eco-friendly) way to bring your Easter hostess a treat.
