2 Healthy Breakfast Sandwiches

9781612433707.01A couple weeks back Ulysses Press sent me some amazing mail. They’re taking sandwiches to the next level with “Crazy for Breakfast Sandwiches,” a new cookbook packed with 101 recipes for mouthwatering, handheld meals you can make in minutes using your at-home sandwich maker. (And unlike McDonald’s, this book serves up delicious meals even past 10:30 a.m.)

From classic and healthy to creative and gourmet, these recipes utilize popular sandwich makers to make the most tasty sandwiches for any meal of the day.

Some of my favorites include the classic Bacon, Egg and Cheese Bagel, a spicy breakfast burrito and S’Mores Toast. Oh, there’s also an Apple Pie Donut Sandwich….just gonna throw that out there.

 

I had so much fun using their recipes, I thought it would be fun to share some of my own! Here are two of my favorite sandwich recipes using my Breville Panini Press and Grill (thank you wedding registry!).

Banana and Almond Butter Panini

2 slices whole grain bread

1/2 banana

Approx. 1 tablespoon of Justin’s Honey Almond Butter (or nut butter of choice)

Approx. 1 teaspoon of raw organic honey

Coconut oil cooking spray

Spread almond butter onto one slice of bread and honey onto the other. Slice banana into long strips. Sandwich between bread.

Spray the outside of the sandwich with coconut oil spray and cook until golden brown. Enjoy!

Garden Omelette Panini

2 slices sourdough bread

2 eggs, beaten

4 fresh mushroom

Small handful of fresh spinach

2 slices of tomato

2 slices cheddar or jack cheese

Cooking spray

In a small frying pan sauté spinach and mushrooms until tender/wilted. Pour eggs over veggies and cook through, flipping once.

Place your egg on top of bread and top with tomato slices and cheese. Assemble sandwich, spray both sides with cooking spray and cook until golden brown.
