Golden Grahams Crusted Texas Brioche French Toast

Ingredients

  • For French Toast:
  • 3 cups milk
  • 6 eggs
  • ¼ teaspoon ground cinnamon
  • 2 whole vanilla beans (seeds removed)
  • 2 slices of brioche Texas toast style bread
  • 1 cup Golden Grahams crumbs
  • 2 tsp. clarified butter (for cooking French toast & on French toast)
  • 1 banana
  • 3 tblsp. blueberry compote (see directions below)
  • 2 tblsp. toasted walnuts
  • 3 ounces 100% maple syrup
  • 1 tsp. powdered sugar
  • Blueberry Compote:
  • 8 cups fresh blueberries
  • ¾ cup water
  • 1 cup sugar
  • 2 ½ T. lemon juice

Instructions

  1. French Toast:
  2. Place milk, eggs, cinnamon and vanilla beans in a small bowl and mix well until all items are combined. Keep cool until ready to use.
  3. Preheat non-stick pan to medium heat.
  4. Dip bread in milk and egg batter and soak for 5 seconds on each side.
  5. Coat soaked bread generously with cereal crumbs.
  6. Coat pan with butter and cook toast on medium heat for 2 minutes then flip toast and cook for an additional 3 minutes. Cook until toast is golden brown and center of bread is not soft or mushy to the touch.
  7. Remove toast from pan and cut in half and place on a serving plate. Garnish with blueberry compote, walnuts and banana and finally sprinkle powdered sugar on top and serve hot.
  8. Compote: Place all items in a small sauce pan and bring to a boil.
  9. Once boiling lower heat to a small simmer and simmer for 5 minutes.
  10. Keep warm until ready to use.
