Three Cheese Loaded Potato Waffles

It’s football season, and no sports gathering is complete without some delicious snacks! I love potato skins, but honestly I just don’t have the time or patience to bake and scoop out a tray of little potatoes anymore. With two kids under two, I’m all about user-friendly (user-friedly and covered in cheese to be exact)- so, my version of the loaded potato skin utilizes a match made in heaven: Idaho Spuds and the trusty waffle iron.

I’ve been utilizing Idaho Spuds a lot lately. They’re so easy and really, really good. Discovering them as the topping for Shepard’s Pie was a game changer.

These potato waffles are so yummy and super easy; plus you can create a spread which will allow your guests to customize them. I like to put out bowls of chives, cheese, sour cream, bacon and different sauces for guests to have fun with. If you want to make things real easy, you can throw most of the ingredients I just mentioned in the waffle iron with the potatoes!

These waffles scream for sauce! Drizzle them with hot sauce, sour cream, ranch or buffalo sauce…anything you love! Here’s how you make them:

Three Cheese Loaded Potato Waffles

Ingredients

  • 2 Tablespoons Vegetable Oil
  • 2 ½ Cup Idaho Spuds Three Cheese Mashed Potatoes, prepared
  • ¼ Cup Sour Cream
  • 2 Tablespoons Water
  • 2 Large Eggs
  • 1 Cup Shredded Cheddar Cheese
  • ½ Cup Flour
  • ½ Teaspoon Baking Powder
  • ¼ Teaspoon Baking Soda
  • Toppings (to taste): Chopped green onions, shredded cheese, sour cream, bacon, hot sauce.

Instructions

  1. Preheat waffle maker (hottest setting if you have options).
  2. In a large bowl, whisk together oil, sour cream, water and eggs. Stir in prepared Idaho Spuds and cheese until well combined.
  3. In a separate bowl, whisk together the dry ingredients (flour, baking powder and baking soda).
  4. Fold into wet ingredients until well combined.
  5. Spray waffle maker with non-stick spray. Spread potato mixture evenly onto the waffle maker. Amount varies based on your maker- mine takes about ½ cup.
  6. Close the lid and cook until the waffle is browned and crisp around the edges. Remember there’s raw egg, so don’t pull out too soon.
  7. Garnish with your favorite toppings. We love to use sour cream, bacon, sour cream and drizzle with buffalo sauce. Perfect for game day!
