One of my biggest sources of burn-out centers around meal planning. No one wants to get stuck in a rut, but it’s also a huge bum-out when you try a recipe you found online and it’s a bust. I thought it would be fun to share my weekly dinner wins here! I’ll test drive the recipes of the internet, so you don’t have to.
You’ll notice a theme this week with lots of easy dinners- because after the holidays Mama needed a break!
Instant Pot Chicken Burrito Bowls– This might be one of the best things I’ve ever made in the instant pot. Honestly. You create a warm and creamy base of chicken, rice, corn, beans and salsa in the instant pot- and then top with all of the fresh fixings. I was so impressed. I used chicken thighs instead of breasts, because that’s what I had, and the bowls were delicious.
Instant Pot Lazy Lasagna– This wasn’t mind-blowing, but everyone loved it. A super family-friendly recipe that comes together really fast. This falls somewhere between a lasagna and a soup…so don’t have the expectation of a firm dish. I would make it again.
Tomato Tortellini Soup– I made this with a big kale caesar salad and some warm, crusty bread and everyone loved it (I pulled the tortellini out of the soup for the kids). I did the slow cooker version, so it was beyond easy. Honestly, if you want to make a variation of this, Rao’s and Trader Joes both have tomato soup that would serve as a delicious (and even easier) base.
